We have some nice barbecue also..we call it "churrasco", but likewise you guys, we don't use sauces to season the meat, mostly unrefined salt and what we call "salmora" wich is basicly salted water with a couple of chopped garlic and onion slices, pouring the liquid over the meat. The most traditional families do it like in the fathertimes. Meat is stuck in long metal sticks (the old ones did use swords) and set it around a bonfire. tender as heaven..you should try it!

thanks pitboys,btw did them standin ribs last night,came out great,fire died out bout 2hours and 45 mins into the cookin but i finished off in the oven,yalls beer sauce poured over just nice too.
