as spaceemperordarell explained Kirk and the mirror spock's actions caused a difference, but it did more harm then good. It made the terran empire weak and led to the enslavement of the terrans at the hands of the klingon/Cardassian alliance. Also I believe there were about 3 or 4 DS9 episodes that contained the mirror universe and the one episode of enterprise(which had ties with the tos episode the tholian web where it was shown what happened to the Defiant.
